I was sitting here thinking about which recipe to post next and something came to mind. This is a tip I thought I would share from my son who loves to cook. When baking a whole fresh chicken after cleaning gently pull the skin from the breast up carefully, it will stretch, mix your spices you like with a cap or two of olive oil. Let everything set for 10 min then rub spices and oil under the skin across the meat then what is left over rub on top the chicken skin evenly until you've got it all with a very thin layer of oil. It will brown very nicely but the main point is to have the oil and spices inside the skin so it cooks into the meat. Put into a roaster with an insert. Don't have one? Me either, so I use a sheet cake pan and set my chicken on an upside sown loaf pan. Cook till done with a thermometer. Plate and let stand for 5 minutes. Your done and it is good!
